Fiber is the portion of plants that we cannot digest or absorb in our gastrointestinal tracts.  Most fiber stays within the intestine where it modulates digestion of other foods and affects the consistency of stool. Indole-3 -Carbinol

You have likely heard more times than you can remember that broccoli and kale are good for you.   One specific reason is indole-3-carbinol, which comes from cruciferous vegetables.  In addition to broccoli and kale, these vegetables are Brussels sprouts, cabbage, collards, cauliflower, kohlrabi, mustard greens, turnips and rutabagas.  One head of cabbage contains about 1200 mg of indole-3-carbinol.
